Holiday Mashed PotatoesIngredients (use vegan versions): 7 large potatoes
1/4 cup minced garlic
1/8 cup minced onion
1 teaspoon rosemary
3 tablespoons olive oil (the kind for high-heat)
1/4 cup butter substitute
2/3 cup vegetable broth
2/3 cup milk substitute
1/4 cup cream cheese substitute
1/8 cup sour cream substitute or a couple tablespoons of vegan mayo
freshly ground black pepper
sea salt or garlic salt
seasoning mix (optional)
Directions:1. Wash, peel, and chop potatoes; boil in salted water.

Creamy Quick Mashed PotatoesIngredients (use vegan versions): 5 cups cubed russet potatoes
1/2 cup cashews
1 cup water
2 cups water
1/2 tablespoon salt
1/4 tablespoon oregano
1/4 tablespoon parsley
1/4 tablespoon basil
1/4 tablespoon sage
salt to taste
Directions:Boil potatoes in large pot of water till tender (about 15 minutes).
Blend cashews with 1 cup water and 1/2 tablespoon salt till creamy (about 2 minutes) Add 2 cups of water and set aside.
When potatoes are done cooking place in a food processor with 2 Cups of the cashew milk, seasonings, and salt to taste. Process till smooth.
Serve hot!

Harvest Veggie PieIngredients (use vegan versions): 6-8 med potatoes cut, peeled, and boiled
1 small butternut squash cut into bite size chunks
1 sm-med rutabaga cut into bite size chunks
2 large carrots chopped
1 med sweet onion diced
1/2 cup fresh spinach chopped
1 teaspoon poultry type seasoning ( or any cracked pepper blend)
1 teaspoon Italian seasoning
scant dash ground cloves
scant dash nutmeg
small pinch anise seed (only like 6 or so seeds)

1 orange - zest and juice
2 tablespoons cider vinegar

pinch ground nutmeg
4 cups uncooked brown rice, cooked according to the package
1/2 cup dried cranberries
1 red apple, cored and chopped
1 cup chopped celery
4 parsley sprig, chopped
1/4 cup toasted pecan pieces
