Vegans & Vegetarians making a difference!
Sunday was meant to be a lazy sort of a day. I truly believe this in my heart of hearts. Especially today when the temp outside was still a whopping 90 degrees! Mid November should be all about fall, chilly weather, and cozy soup. The first two seemed to be M.I.A. in my neck of the woods so I thought that if maybe I tried the third they might bother to muster up the motivation to come visit me. Since it's still so warm out I hardly felt like hanging out in a hot kitchen so I took a few shortcuts, blasted the A/C and called it a night.
Roasted Red Pepper & Tomato Soup with Macaroni

Heat up this...

Add this...

Yummy Sunday Soup!
Sunday Sammich

Make fresh hummus...
1 can organic chickpeas, drained & rinsed
1/8 cup excellent olive oil
Juice 1 organic lemon
2 tablespoons tahini
1-2 cloves of fresh roasted garlic
Sea salt to taste
Blend all ingredients in blender or food processor until smooth. Add water to thin if needed.

Slice up some organic tomatoes...

Marinate in balsamic vinigarette for ten minutes...

Toast sprouted wheat sesame bagel...

Add pepper jack cheese ( or not ) and some greens of choice...
Wasn't that easy?

Finish off with some fragrant white jasmine tea & black currant tea biscuits (I'm pretty sure they're vegan unless they have some weird milk derivative that I'm unaware of) and Fall will be BEGGING to come over...
I mean, I busted out the hot tea, he's gotta show up now, right?
