M asked me to make cupcakes for his drama class last night. My ears perked up like my golden retriever's when you say "walk?". I quickly stopped what I was doing to bolt across the room, peer at him intently, and make sure I had heard correctly. "Did you say you wanted me to make cupcakes for your drama class?"

He shrugged his shoulders in that whatever-but-yeah-I-guess sort of a way that teenagers do. He wasn't getting away so easily.

"So, you're telling me they liked the last ones?" I grilled, barely able to contain my glee. He gave me a look like I was an alien. "Yeah. They said your cupcakes own. They've been asking for them since the last time."

"WHAT?! AND YOU DIDN'T TELL ME?"

He shrugged again with disinterest and made a beeline to his room. I bounced around the living room in an odd impromptu dance of joy. They loved my cupcakes, they really, really did!(Channeling Sally Field? Huh. Definetly not cool. )

They were delicious. I sampled one ( or two... or five... ) before I sent them off. Yummy little moist yellow cakes filled with raspberry perserves, frosting and sparkling sugar rainbow crystals ( I went a little too far with that part...) but the BEST part, the GLORIOUS part, was that they were made with........drumroll.............................................................TOFU!!!!!!!!

God I love being a vegetarian.

Lol I love this blog....I remember the first time I made banana muffins for my carni family and friends....they couldn't get enough of them and kept asking for more..I just recently told them, after them getting squeemish because I told them I'm bringing a pumpkin tofu pie to dinner on Thanksgiving, that their beloved muffins they love so much are also made with tofu.....lol...it's so great!
